Pancit Malabon
is a Filipino noodle which originated in Malabon. This is one of my favorite pancit and my mom cook it best for me. There are lots of food that can be placed as toppings such as shrimps, oysters, squid, egg, vegetables, dried fish and pork.

I like it better with rice cake as the saltiness and the sweetness of the two when combined is yummy! Why am I posting about this today? It’s because when I was at Patient First Glorietta, the nurses there are eating this food and the smell made me crave for it!

I was planning to buy one from Amber’s but wasn’t able to because I was in a hurry to go home. Oh well, I’ll just satisfy my cravings tomorrow.

Friend’s Pancit Palabok Recipe

I saw my friend’s photo in Facebook of pancit palabok that he made. He’s actually a good cook and whenever he post a photo of food, I always asks him the recipe so that I could cook it when I have time.

He lives in the U.S. but he said there are lots of Filipino stores selling ingredients for Filipino dishes that’s why he can cook Filipino food.

Anyway, here are the ingredients and procedure on how he made this yummy-looking palabok. I’ll just refer to this post whenever I’ll have the time to cook it.

Ingredients: (sauce)

  • Shrimp
  • Hard boiled egg
  • Pork strips
  • Tinapa flakes
  • Dinurog na chicharon
  • Online leeks
  • Garlic
  • Atchuete (Annatto seeds that is marinated in water for 15-20 mins)
  • Shrimp bullion
  • Pork bullion
  • Corn starch
  • Fish sauce
  • Salt
  • Pepper
  • Onions
  • Shrimp Stock
  • Tofu (optional)

Shrimp stock:

  1. Boil shrimp, add fish sauce, salt, pepper and shrimp bullion
  2. Once the shrimp is cooked, remove shrimp and keep the soup

Procedure (Sauce):

  1. Sautee onions, pork and tofu
  2. Once cooke, add the shrimp stock
  3. Add pork cubes orĀ  bullion
  4. Add annatto seeds (marinated)
  5. Add fish sauce, salt and pepper, adjust according to your taste
  6. Add corn starch.

Preparation

  1. Boil noodles and top it with sauce
  2. Add tinapa flakes
  3. Add chicharon
  4. Add egg
  5. Add onion leeks
